The demand for cheese has risen globally over the years due the immense health benefits of the product and of course, its unmatched taste and diverse uses. A report published by Statista in February, 2022 put the value of the global cheese market at over $77.6 billion in 2021. It also projected the market size to exceed $113 billion by 2027, driven by increasing demand for cheese as well as the emergence of manufacturers of non-dairy products. However, there has been a shift in demand towards plant-based cheese as consumers become more conscious of the food they eat and the effects of their production on the environment.
